When you want to eat a little healthier during the cold, winter months, you often turn to warm and hearty vegetables. One of the best ones you can get this time of year is butternut squash.


This begins being in season in the autumn/fall but is also great to have during the winter. Here are some reasons to add some butternut squash to your meal plans.

My Favourite Ways to Cook Butternut Squash

Such a versatile veg!

It works especially well in a warming soup. I like to add a pinch of chilli flakes and chopped apple to give it a lift.


Roasting is a really simple way to cook butternut squash. If roasting alone try sprinkling with 1/4 - 1/2 tsp ground cinnamon. Makes your kitchen smell delicious too.


Butternut squash also makes a simple lunchtime risotto. Flavour with sage and use brown rice if you want to be extra healthy.


Add spices to make beautiful winter stews. My favourite are curry with lentils and coconut milk and Moroccan tangine with chickpeas.


However you choose to serve butternut squash you can add heal variety to your meals this autumn and winter.
